Ingredients:
Shrimps (in shell), scallion (or called “spring onion”), and ginger.
For the sauce: soya sauce (don’t buy dark soya sauce), sugar, corn starch (or similar flour to thicken the sauce), and chilli sauce / pepper if you like spicy, and water. Mix them.
How to make:
Cut the back of the shrimp open and remove the dark string (or the intestines. don’t know how it should be called)
Heat oil in the wok and pan fry both sides of the shrimps lightly till the shells are golden but the meat is not fully cooked
Remove the shrimps from the wok
Heat oil again and put in scallion and ginger (you need to be quite generous with these two things otherwise the dish would be tasteless), fry them till the scallion is quite withered (that’s how I like it but some people like it to be only very lightly cooked. Up to you)
Throw in the shrimps, fry for a few secs then throw in the sauce as well. cover up and cook till the sauce is thickened and the shrimps are cooked. Should not take more than a few mins.
Please make sure you don’t overcook the shrimps otherwise it will taste very rough. It should only take a few mins to cook.
